Ingredients:
· 3½ cups all-purpose flour
· 1 tsp baking soda
· ½ tsp salt
· 1 Tbsp ground ginger
· 1 Tbsp ground cinnamon
· ½ tsp ground allspice
· ½ tsp ground cloves
· 10 Tbsp (about 142 g) unsalted butter, softened
· ¾ cup packed brown sugar
· ⅔ cup molasses (not blackstrap)
· 1 large egg
· 1 tsp vanilla extract
· Optional: icing for decorating (royal icing or simple glaze)
Steps:
1. Mix the dry ingredients (flour, baking soda, salt, spices) in a bowl.
2. Cream butter, brown sugar, and molasses together until smooth.
3. Beat in the egg and vanilla.
4. Add dry ingredients to wet and mix until a stiff dough forms.
5. Divide dough in half and wrap each as a disc; chill at least 3 hours.
6. Preheat oven to 350 °F (177 °C). Line baking sheets.
7. Roll dough to about ¼-inch thick and cut shapes.
8. Bake ~9–11 minutes (smaller shapes shorter; larger shapes longer).
9. Cool, then decorate with icing if you like.
