Delicious Pumpkin French Toast

1/4 tsp Ginger, 1/3 cup Pumpkin puree, 1 cup Oat or almond milk (unsweetened), 2 tbsp Maple syrup, Maple syrup to top, 1 Regular or vegan butter, 1 tsp Cinnamon, Cinnamon to top, 1/8 tsp Cloves, 1/4 tsp Nutmeg, 1 Powdered sugar, 1 1/2 tsp Pumpkin pie spices, 1 tsp Vanilla, 1 loaf Bread (regular or gluten free), 1/4 cup Yogurt (regular or non-dairy)

Directions:

To make pumpkin French toast, start by whisking together the wet and dry ingredients in a mixing bowl — oat or almond milk, yogurt, pumpkin purée, maple syrup, vanilla, cinnamon, nutmeg, cloves, ginger, and pumpkin pie spice — until smooth and well combined. Slice a loaf of bread, either regular or gluten-free, into thick pieces and let the pieces sit for a few minutes if they’re very soft so they can better absorb the mixture. Dip each slice into the pumpkin batter, coating both sides evenly, and allow any excess to drip off. Warm a skillet or griddle over medium heat, melt a bit of butter or vegan butter, and cook each slice for a few minutes on each side until golden brown and slightly crisp. Once done, serve the French toast warm with a drizzle of maple syrup and a light dusting of powdered sugar and cinnamon on top for a cozy fall touch.
