- Step 1: Prep the pan & chicken
Heat a skillet with a little oil over medium heat. Add diced chicken and taco seasoning, then cook for about 4 minutes. - Step 2: Add vegetables
Stir in diced bell peppers and onions. Cook for another 5 minutes until the chicken is fully cooked and the veggies are softened. - Step 3: Set filling aside
Remove the chicken and veggie mixture from the pan and set it aside. - Step 4: Start assembling
In a clean skillet, melt a little butter or oil and place a tortilla in the pan. - Step 5: Add fillings
Sprinkle cheese on one half of the tortilla, add the chicken mixture, then top with more cheese. - Step 6: Fold & cook
Fold the tortilla over and cook until the bottom is golden brown. - Step 7: Flip & finish
Flip the quesadilla and cook the other side until golden and the cheese is fully melted. - Step 8: Repeat
Continue the process with the remaining tortillas and filling. - Step 9: Serve
Remove from heat, slice into wedges, and serve warm.
